EVALUASI UJI HEDONIK DAN UJI pH SEDIAAN PERMEN JELLY JERUK KALAMANSI (Citrofortunella microcarpa)

Jeruk Kalamansi (Citrofortunella microcarpa) merupakan salah satu komoditi pertanian yang telah banyak dikembangkan di Provinsi Bengkulu. Kalimansi mengandung kadar Vitamin C tinggi sebesar 3,863 mg/100 g namun memiliki rasa asam sehingga kurang enak dikonsumsi langsung. Hal ini mendorong peneliti untuk membuat dalam bentuk permen jelly jenis produk digemari oleh berbagai kalangan usia, khususnya anak-anak. Penelitian bertujuan mengevaluasi pH dan melakukan uji hedonik terhadap sediaan jeruk kalamansi. Metodologi digunakan pada penelitian adalah experimental. Hasil pengujian 3 formula diperoleh berturut – turut yaitu 3,6 (F1), 3,4 (F2) 3,7 (F3). Uji hedonic ketiga diujikan kepada 10 orang panelis menunjukkan nilai F1 (76%), F2 (84%) F3 (70%); warna F1(70%), (74%); (82%), (86%), (66%) tekstur (80%), F2(90%) (68%). Kesimpulan hasil evaluasi kalamansi paling disukai dengan 3,2.
